Every Christmas and New Year I buy food with as long a sell by date as possible in the hopes it will be devoured by my family of gannet's but there are always items needing eating once the festivities are over. This year there was an unopened pot of luxury hummus, keeping with the Veganuary theme I thought I would try using it up in a home made soup...... wow was it delicious... and filling. My recipe used vegetables lurking in the fridge but I am sure it would work with whatever vegetables you have in your fridge or use frozen one's. 💕
Here's my recipe:
Hummus and red pepper soup ( for 3 people ) takes approx. 45 minutes
1 large onion, finely diced and fried in 1 tablespoon of olive oil for 5 minutes.
Add 1 large carrot finely chopped ( just wash it no need to peel ) 1 large red pepper chopped and 2 tomatoes chopped to the onions and fry for 5 minutes stirring occasionally. While the vegetables are sweating boil a kettle of water. After 5 minutes add 1 litre of hot water, 1 vegetable stock cube, 1/2 teaspoon of thyme, 1 teaspoon smoked paprika and 2 bay leaves,
Bring to a simmer and add a lid and leave to cook for 20 minutes. Remove the lid and add a whole pot of hummus stir well. Bring the whole lot back to the boil add salt and pepper to taste. Serve. and enjoy. I wanted the soup a little thicker so placed 1/3 of it in a blender with an ice cube, blitzed and stirred back into the remaining soup before serving.
